Where the beans come from, and who roasts them

Coffee is not grown commercially in Arkansas. It grows in more than 40 countries, mostly in a band along the equator. Several cafes here roast their own beans: Airship roasts at its 5th Street cafe, and 211 Cafe roasts in the public library. Onyx Coffee Lab, founded in May 2012 by Jon and Andrea Allen, began as a small cafe and roastery in Springdale and is now headquartered in Rogers.

    What “specialty” means

    For years the Specialty Coffee Association scored coffee on a 100-point cupping scale, and 80 or above counted as specialty. Its current definition goes beyond a single score: specialty coffee is recognized for distinctive attributes, such as flavor, origin, or how it was grown and processed, that give it significant extra value in the marketplace.

    Washed, natural, or honey

    Bags and menus often name the processing method. A washed coffee has the fruit removed before the seed dries, and it tends to taste cleaner and brighter. A natural dries inside the whole cherry and often tastes fruitier. Honey process sits between them, drying with some of the sticky fruit layer left on.

    A national champion down the road

    Andrea Allen of Onyx won the U.S. Barista Championship on February 23, 2020, in Costa Mesa, California, after finishing second three times. Before Onyx, she managed two Arsaga’s coffee shops, one of them in Bentonville, which she and Jon bought in 2009.

Onyx Coffee Lab’s cafe just off the Bentonville square, next to the farmers market. Espresso, pour-over, pastries, a light lunch, and local beer, with patio seating and wifi. Pets are not allowed, except service animals. No outside food.

Airship’s first cafe and roastery, opened in the summer of 2018. Breakfast tacos, brisket burritos, pastries, kombucha, and local beer. The porch is open to dogs in a fenced yard, and wifi is available. Canister refills are offered.
